ACTIVE BIO-PACKAGING: A SAFE, BIODEGRADABLE AND ANTIBACTERIAL AS AN ALTERNATIVE TUNA PACKAGING

Cases of food poisoning in Indonesia have been around 48 cases in 2006 and continued to increase in 2008 to 8,943 cases with the number of victims 25,268 people in traditional markets and supermarkets are still found in fresh food or processed food that has expired but consumed by consumers. Tuna is one of the popular community of fishery products, but very easy to be damaged and cause poisoning. This is because the distribution and sale in the open state so as to allow the occurrence of spoilage and pathogenic microbial contamination that can produce toxic compounds such as TMA and TVBN which led to an increase in the pH of the fish as an indication of a decrease in the quality of the fish cause of poisoning with symptoms of vomiting, lip swelling, headache, itching, nausea, facial flushing and body weakness will arise when taking 70 to 100 mg of histamine and TVBN above the safe limit of 30% mg/100 g. During the determination of the quality of the freshness of tuna carried out by the organoleptic qualities. The way it is less accurate because it is subjective and can’t guarantee that the tuna was still unfit for consumption. This is because tuna is stored in cold conditions is more difficult to determine the quality and extent of the damage. For that, we need Active Bio-Packaging that is edible film packaging with bioindicator pH that can detect damage rapidly, accurate and practical use of indicators of freshness as well as to minimize and avoid the risk of product contamination by pathogenic and spoilage bacteria. Active Bio-Packaging has the advantage of increasing the resilience of the material is proportional to the increase in strength, increased a better barrier properties (for packaging), better optical characteristics due to the very small size of nanoparticles, easier processing because of the lower viscosity, biodegradable, can extend the shelf-life of fresh products such as Tuna by regulating respiratory exchange, also can improve the quality of fresh Tuna by slowing the loss of moisture, reduce fat oxidation and discoloration and improve the appearance of the product. This product is made with a monthly investment cost of IDR 58,958 and operating costs IDR 53,000 in order to obtain a profit of IDR704,000/month or 44%. Related parties that contribute to the application and implementation effort is the government, investors, research institutions, merchants and consumers.
